How can I change the default color of the highlight tool in Adobe Acrobat and save it as the default setting?

You can do this by right-clicking on some highlighted text then selecting Properties. Here you can set the color that you desire and then at the bottom of the properties dialog, find the "Make Properties Default" feature, which will let you set this color as the default.
