I have several PDFs which I need to delete text and images from. How can I completely delete this information? It's highly critical that people cannot examine this document and find the deleted data.

Deleting content from the page is called "redaction". To redact natively in a PDF (ie, without reducing the whole page to an image first), you have two basic choices.
Adobe's Acrobat Professional since versions 8 includes a Redaction feature.
My company, Appligent Document Solutions, offers a plugin for Acrobat Standard and Professional called Redax. Redax was the first PDF redaction solution - it's been available since the 1990s and it's generally considered the definitive PDF redaction software.
In either case, the content that you redact is really, permanently deleted from the document.
